August 24th – Lime Cookies for Jack Frost

Jack was taken to the hospital after collapsing at the manufacturing facility.  He was exhausted and his doctor kept him in the hospital overnight to make sure he was really okay.

The next morning Santa and Jessie went to visit.  They delivered a batch of Molly’s Lime Cookies and were pleased to see that Jack was up and dancing to the music on the radio.

Lime Cookies are Jack’s favorite and he was pleased to get the recipe with his treat. He immediately stopped his jig and dug into the cookies.

The recipe is below.

3/4 cup melted butter

1 cup white sugar

1/2 can frozen lime concentrate

1 beaten egg

1 tsp baking soda

1/4 tsp salt

2 cups flour

1 cup pecans

Mix butter, sugar, lime concentrate and beaten egg together.  Mix dry ingredients together and then blend into wet ingredients.  Chill batter until the mixture stiffens up and then spoon mixture by spoonfuls onto a baking sheet.   Bake at 350 degrees Fahrenheit for 12-14 minutes or until golden.
