Molly’s Mixed Fruit Cobbler

Santa and Jessie have come down with a cold and Molly is nursing them back to health.  She made tea and chicken soup for the pair just as her mother used to make for her when she was small.

Molly wanted to make something warm and comforting to ease their rumbly tummies.  So Molly whipped up a cobbler with plenty of fruit.   Her recipe is below.

2 cups peaches, peeled and slicedmixedfruitcobbler

Mixed Fruit Cobbler

2 cups blueberries

1 cup cranberries

1 cup raspberries

1/2 cup sugar

3 tbsp flour

Topping

1 1/2 cups flour

1/3 cup sugar

2 tsp baking powder

1 egg

1/2 cup almond milk

Combine fruit, sugar and flour in a large baking dish mixing thoroughly.

Combine topping ingredients until a  thick batter is formed.  Drop spoonfuls on fruit leaving spaces between spoonfuls.

bake at 375 degrees for 45 to 50 minutes.
