Jessie Bakes

Fall is here and the trees are beginning to turn colour.  At this time of year the restaurant chains come out with everything pumpkin and Molly feels like baking some sweet treats.  Molly pulls out her mothers old, worn recipe book and bakes her special pumpkin spice muffins.  They’re the perfect treat for a cold windy day and Jessie loves them.

the bowl as Molly mixed and turned the batter.  When Molly wasn’t watching Jessie licked the spoon.  She wagged her tail furiously and bent to lick the batter from the bowl but Molly pushed her away so that she could portion the batter into muffin tins.  Of course she used a fresh spoon!

While the muffins were in the oven Jessie sat staring at the glass window watching them rise.  The hardest part was waiting for them to cool.  Then, when Jessie thought she could wait no longer, Molly gave her one fragrant treat.

Jessie loved the pumpkin flavour and gobbled the muffin up.   Then she stood waiting for another.

Molly smiled and waved her finger. “No more today, Jessie.  I’m glad you liked the muffin.  Everyone loves my mom’s recipe.  Do you think we should share with our friends?”

Jessie pounded her tail on the floor in agreement and Molly copied out her recipe to share.  Here it is.

INGREDIENTS

1 1/2 cups flour

2 tsp baking powder

1/2 tsp salt

1 tsp pumpkin pie spice

1/2 cup sugar

1 egg

1/2 cup almond milk

1/2 cup cooked pumpkin

1/4 cup melted butter

1/4 cup sunflower seeds plus 2 tbsp reserved for the top of the muffins.

DIRECTIONS

Mix flour, baking powder, salt and pumpkin pie spice together until well incorporated.

Blend sugar, egg, almond milk , pumpkin and butter together until well mixed.

Add dry ingredients to wet and blend just until mixed.

Fold in sunflower seeds.

Turn batter into greased muffin tins and top with reserved sunflower seeds.

Bake in a 400 degree Fahrenheit oven for 20 to 25 minutes. (Make sure mom and dad help you with the oven.  It’s very hot and can burn.)
