Molly’s Cranberry Sauce

Molly likes comfort food in the autumn.  Every weekend she cooks Santa and Jessie a turkey meal and makes Cranberry sauce from scratch!  Below is her recipe.

2 cups whole cranberriescranberrysauce

1 1/3 cups brown sugar

2/3 cup orange juice

3 tbsp lemon juice

Put ingredients in a saucepan and bring to a boil.  Boil for about 5 minutes stirring occasionally until berries start to pop.  Let cool.

Molly’s Cheddar Bread

Molly loves to bake and when she’s happy she experiments in the kitchen to come up with new ideas. Since Santa loves cheddar cheese Molly put together a bread recipe today to treat him after a long day at the manufacturing facility.  The instructions are below.

2 cups flourCheddarBread

4 tsp baking powder

1 tbsp sugar

1 tsp caraway

1 tsp dried rosemary

1/2 tsp dried mustard

1 1/2 cups extra old cheddar

2 tbsp olive oil

1 beaten egg

1 cup milk

 

Combine flour, baking powder, sugar, seasonings and cheese in a large bowl.  Mix eggs, milk and olive oil together.  Add to dry ingredients mixing just until incorporated.  Bake in greased loaf pan for 45 minutes at 350 degrees Fahrenheit.

Brown Sugar Cookies

Jessie watched as Molly folded the cookies together.  She sniffed the air and drooled when she smelled the aroma of molasses and brown sugar.  She sniffed again and then walked over to Molly.  Jessie sat close to the woman and nudged her leg with her nose.

Molly looked down.  “You’ll have to wait until the cookies are baked, Jessie.  I can’t wait to try them.  What about you?”

Jessie barked and held up her paw.

“It looks like you agree.”  Molly patted the dog on her head.  “I’ll share when they come out of the oven.  While were waiting I have to write down the recipe for the elves.  I promised Chloe that I’d share.”    Soon Molly had the recipe written out to share with her friends.  Satisfied, Molly opened her blog to add the recipe.  She hoped her readers would enjoy the sweetness of the recipe.

Brown Sugar Cookies

 

1/2 tsp baking poser

1/4 tsp baking soda

1 tsp salt

1/2 cup melted butter

1/3 cup shortening

1 beaten egg

1/2 cup molasses

1/2 cup brown sugar

2 tsp vanilla

Mix wet ingredients together.  Mix dry ingredients together. Fold dry ingredients into wet ingredients until a stiff dough is formed.  Roll dough into a cylinder in parchment paper and chill overnight.  Remove from refrigerator and cut into slices. Bake on cookie sheets at 350 degrees Fahrenheit for 12-14 minutes or until golden brown.

Cranberry Tarts

The countdown to Christmas is on and each and every day Santa has to make sure a task is checked off his list.  All the work he has in December makes him very hungry and Molly has made special for Santa and the elves.  Today she made a fresh batch of Cranberry Tarts for everyone.  Her special recipe is below.

Pastrycranberrytarts

3 cups flour

1 tsp salt

1/2 lb vegetable shortening

1 egg

milk

Mix flour, salt and vegetable shortening until crumbly.  To a measuring cup add 1 egg and enough milk to make 1/2 cup.  Pour wet mixture into flour mixture and combine.  Chill for at least an hour.

Cranberry Mixture

3/4 cup cranberries

1/4 cup raisins

1/4 cup sugar

1/2 tbsp flour

dash salt

1/3 cup hot water.

Combine above in blender until mixture is smooth.  Pour into prepared tart shells using the pastry recipe above.  Bake in a 400 degree Fahrenheit oven for 20 minutes.
