Cranberry Tarts

The countdown to Christmas is on and each and every day Santa has to make sure a task is checked off his list.  All the work he has in December makes him very hungry and Molly has made special for Santa and the elves.  Today she made a fresh batch of Cranberry Tarts for everyone.  Her special recipe is below.

Pastrycranberrytarts

3 cups flour

1 tsp salt

1/2 lb vegetable shortening

1 egg

milk

Mix flour, salt and vegetable shortening until crumbly.  To a measuring cup add 1 egg and enough milk to make 1/2 cup.  Pour wet mixture into flour mixture and combine.  Chill for at least an hour.

Cranberry Mixture

3/4 cup cranberries

1/4 cup raisins

1/4 cup sugar

1/2 tbsp flour

dash salt

1/3 cup hot water.

Combine above in blender until mixture is smooth.  Pour into prepared tart shells using the pastry recipe above.  Bake in a 400 degree Fahrenheit oven for 20 minutes.

Santa’s favorite Cranberry White Chocolate Shortbread

2 1/2 cups flourwhitechocolateshortbread

1/4 tsp salt

1 cup butter

1 cup icing sugar

1/2 tsp vanilla extract

1 1/2 cups dried cranberries

1 cup sliced almonds

white chocolate

Mix flour and salt together.

In a separate bowl mi butter and sugar.  Add vanilla, cranberries and almonds.  Mix in flour mixture and roll onto parchment paper into two logs.  Freeze for at least one hour.

Remove dough from freezer.  Slice into wedges and place on cookie sheets.  bake in a 325 degree oven for 25 minutes.

Melt white chocolate in microwave.  (Heat 10 seconds at a time just until the chocolate is melted).  With a spoon drizzle chocolate onto cookies.  Allow chocolate to harden and serve.

Molly’s Mixed Fruit Cobbler

Santa and Jessie have come down with a cold and Molly is nursing them back to health.  She made tea and chicken soup for the pair just as her mother used to make for her when she was small.

Molly wanted to make something warm and comforting to ease their rumbly tummies.  So Molly whipped up a cobbler with plenty of fruit.   Her recipe is below.

2 cups peaches, peeled and slicedmixedfruitcobbler

Mixed Fruit Cobbler

2 cups blueberries

1 cup cranberries

1 cup raspberries

1/2 cup sugar

3 tbsp flour

Topping

1 1/2 cups flour

1/3 cup sugar

2 tsp baking powder

1 egg

1/2 cup almond milk

Combine fruit, sugar and flour in a large baking dish mixing thoroughly.

Combine topping ingredients until a  thick batter is formed.  Drop spoonfuls on fruit leaving spaces between spoonfuls.

bake at 375 degrees for 45 to 50 minutes.

Halloween Candy Cookies

The great week of Halloween festivities are about to begin  and Molly has been planning for weeks.  She has sewn costumes, helped put together a haunted house and baked sweet treats for the elves.

Molly loves candy and she loves mixing a variety of confections in her cookie batter. This is her recipe below.

Halloween Candy Cookies

1 cup white sugar

1 cup butter

1 tsp vanilla

2 eggs, beaten

Mix the above ingredients together.

2 cups flour

1/2 tsp salt

1/2 tsp baking soda

1 cup mixed Halloween miniature candies

Add wet ingredients to mixed dry ingredients.  Bake at 350 degrees Fahrenheit for 12 to 15 minutes.
